  • ½ tsp paprika (for a mild smoky touch)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 1 tsp Dijon mustard (enhances the cheesy flavor)

Optional Add-Ins:

  • A pinch of cayenne pepper – for a spicy kick.
  • 2 tbsp cream cheese – for extra creaminess.
  • ½ cup beer – for a pub-style cheese dip.

Instructions

Step 1: Prepare the Base

  1. In a medium saucepan, melt butter over medium heat.
  2. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly to form a roux.

Step 2: Add Liquid

  1. Slowly pour in the milk, whisking continuously to prevent lumps.
  2. Let the mixture simmer until it thickens slightly (about 2-3 minutes).

Step 3: Melt the Cheese

  1. Reduce heat to low, then gradually add the shredded cheese, stirring constantly.
  2. Add Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper.
