Ingredients
Beef Filling:

1 lb (450g) lean ground beef

1 small white onion, finely chopped

2 ½ tbsp taco seasoning mix

¼ cup water
Enchiladas:

8 medium tortillas (flour or corn)

2 cups enchilada sauce (homemade or store-bought)

2 cups shredded cheddar cheese

Instructions
In a skillet over medium heat, cook the ground beef and diced onion until the meat is browned and fully cooked. Drain off any excess fat. Stir in taco seasoning and water, then let it simmer for 2-3 minutes. Remove from heat and set aside.
Preheat the oven to 375°F (190°C). Lightly coat the bottom of a 9×13-inch baking dish with a few spoonfuls of enchilada sauce. Spoon the beef mixture evenly into each tortilla, sprinkle with a bit of cheese, roll them up, and place them seam-side down in the baking dish.
Pour the rest of the enchilada sauce over the rolled tortillas, spreading it out so everything is coated. Sprinkle the remaining cheese generously over the top.
Bake for 15-20 minutes or until the cheese is bubbly and starting to brown. Remove from the oven and allow to cool slightly before serving.
Top with your favorite toppings like sour cream, diced tomatoes, avocado slices, or fresh herbs. Serve warm.
