Description

These chocolate-covered almonds are super easy to make and crazy delicious! Crunchy almonds coated in smooth, melty chocolate. What’s not to love? Perfect for snacking, gifting, or just treating yourself. Warning: they disappear fast!

Ingredients

Scale
  • 2 cups whole roasted almonds (unsalted)
  • 12 ounces chocolate (dark, milk, or white)
  • Optional toppings: sea salt, cocoa powder, crushed nuts, or coconut flakes
  • Optional: 1 tablespoon coconut oil (helps create smoother chocolate coating)

Instructions

  1. Preparation
  • Ensure almonds are dehydrated and at room temperature
  • Line a large baking sheet with parchment paper
  • If almonds aren’t roasted, toast them in the oven at 350°F for 8-10 minutes until fragrant
  1. Melting the Chocolate Using a double boiler method:
  • Fill in the bottom pot with 1-2 inches of water
  • Place chocolate (chopped or chips) in the top bowl
  • Heat water to a gentle simmer, not boiling
  • Stir chocolate constantly until completely melted
  • Add coconut oil if using, for a smoother consistency

Alternative microwave method:

  • Place chocolate in a microwave-safe bowl
  • Heat in 20-second intervals
  • Stir thoroughly between each interval
  • Continue until fully melted and smooth
  1. Coating Process
  • Add almonds to the melted chocolate
  • Gently stir until each almond is thoroughly coated
  • Work quickly while the chocolate remains warm
  • Use two forks to lift almonds and allow excess chocolate to drip off
  1. Setting the Chocolate
  • Place coated almonds on the prepared baking sheet
  • Space them slightly apart to prevent sticking
  •  Sprinkle with desired toppings while the chocolate is still wet.
  • Refrigerate for 30-45 minutes until completely set

Notes

  • Toast for Extra Crunch: Lightly toasting the almonds enhances their flavor and crunch.
  • Chocolate Choices: Use dark, milk, or even white chocolate for variety.
  • Easy Melting: Add a little coconut oil to the chocolate for a smoother coating.
  • Flavor Boost: Sprinkle with sea salt, cinnamon, or cocoa powder for extra taste.
  • Storage Tip: Keep in an airtight container at room temp for a week or in the fridge for up to two weeks.
