  • 1/4 teaspoon baking powder – Helps make the fritters light and fluffy inside.
  • 1/4 cup chopped green onions or fresh parsley – Provides a fresh, herby element.
  • Vegetable oil or olive oil (for frying) – Used to achieve a golden-brown, crispy exterior

Optional Add-Ins & Substitutions:

A mixture of breadcrumbs or panko will help firm up the dish when added in proportion to moisture content as 1/4 cup.

Instructions

Prepare perfect zucchini fritters with crispy texture and delightful flavors by following this instructions sequence.

Step 1: Prepare the Zucchini

Wash and dry the zucchinis. Use a box grater or food processor to convert the zucchini ends to shreds after you remove them.
Set a large bowl with grated zucchini then add a teaspoon of salt for the mixture. Next combine the ingredients while stirring until the mixture rests for 10 minutes. Having salt contained in the mixture serves to extract water from the fritters leads directly to their desired crispy texture.

Step 2: Remove Excess Moisture.

Gather a clean cheesecloth or a towel to drain the salted zucchini from the bowl.
Squeeze the vegetables strongly to remove maximum tankage. Excessive moisture in the fritters would make them soft while cooking which leads to their disintegration.
>After removing the highest possible amount of moisture from the zucchini pieces move them back into a mixing bowl that contains no water.


Step 3: Make the Batter

Step 4: Cook the Fritters
