Ingredients

1 ½ lbs beef stew meat

1 tbsp olive oil

1 large onion, diced

2 garlic cloves, minced

3 carrots, sliced

2 celery stalks, sliced

8 cups beef broth

1 cup pearl barley
-
1 tbsp tomato paste
-
1 tsp dried thyme
-
1 bay leaf
-
Salt & pepper

Fresh parsley (optional)
Instructions

Heat oil in a large pot; brown beef and set aside.

Sauté onion, carrots, and celery. Add garlic and tomato paste.

Add beef back in with broth, barley, thyme, bay leaf, salt, and pepper.

Simmer covered for 45–60 minutes, until beef and barley are tender.

Remove bay leaf. Adjust seasoning and serve with parsley.
