Preparation
  1. Preheat the oven to 350°F, and grease a small loaf pan or line it with parchment.
  2. In a bowl, blend the cottage cheese and self-rising flour until a soft dough forms, about 30 seconds using a spoon or hand mixer on low.
  3. Turn the dough into the prepared pan and smooth the top with a spatula or wet fingers.
Baking
  1. Bake for 30 to 40 minutes, until the top is golden and a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes, then remove and cool on a rack before slicing.

Notes

If the dough seems too wet, add a tablespoon of flour at a time until it firms. Do not overmix; mix until just combined for a light crumb. Check the bread at 30 minutes, ovens vary, and bake until the center is set. Cool the loaf enough before slicing, it finishes setting as it cools.
