Preparation
- Put cottage cheese and eggs in a blender or food processor. Blend until smooth and well mixed.
- Add a pinch of salt if desired. Mix again for a few seconds.
Cooking
- Heat a nonstick pan on medium low. Add a little oil or butter if preferred.
- Pour about 1/4 to 1/3 cup batter into the pan for each flatbread. Spread with the back of the spoon.
- Cook for 2 to 3 minutes until edges look set and the bottom is light brown. Flip and cook for an additional 1 to 2 minutes.
- Repeat with the remaining batter. Serve warm.
Notes
Tips for success include blending well for a smoother batter, using a nonstick pan or oil to avoid sticking, cooking on medium low heat, making small pieces for even cooking, and letting the batter sit for a minute if it seems runny.
