Ingredients
  

Noodles and Greens
  • 8 oz fresh or dried Chinese wheat noodles (or spaghetti as a substitute)
  • 2 cups bok choy or spinach, steamed or blanched
Sauce Ingredients
  • 3 tablespoons chili oil (adjust to taste)
  • 2 tablespoons sesame paste or tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar (or rice vinegar)
  • 1 teaspoon sugar
  • 1/2 teaspoon Sichuan peppercorns, ground (optional for authentic flavor)
  • 1/4 cup hot water
Meat Topping Ingredients
  • 1 tablespoon vegetable oil
  • 1/2 lb ground pork or chicken
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon hoisin sauce
Garnishes
  • Chopped green onions
  • Crushed peanuts or sesame seeds

Method
 

Cooking the Noodles
  1. Boil the noodles in a pot of salted water according to package instructions. Drain and set aside.
Making the Sauce
  1. In a bowl, mix chili oil, sesame paste, soy sauce, black vinegar, sugar, Sichuan peppercorns, and hot water until smooth.
Preparing the Meat Topping
  1. Heat vegetable oil in a skillet over medium heat. Add ground pork or chicken and cook until browned.
  2. Stir in the minced garlic, ginger, soy sauce, and hoisin sauce. Cook for an additional 2 minutes. Stir to combine all flavors.
Assembling and Serving
  1. Add cooked noodles to the sauce, tossing to coat well.
  2. Top with the cooked meat mixture and blanched bok choy or spinach.
  3. Finish with chopped green onions and crushed peanuts or sesame seeds for added crunch.

Notes

These Dan Dan Noodles are best served fresh and garnished with additional chili oil for those who prefer more heat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
