For the bread
  • 3 cups all-purpose flour
  • 1 cup active sourdough starter
  • 1.5 teaspoons salt
  • 1 cup warm water
  • 1 whole bulb garlic (roasted)
  • 0.5 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil
  • to taste fresh herbs (optional) For extra flavor.

Method
 

Preparation
  1. In a large mixing bowl, combine the flour and salt. Mix well.
  2. Add the sourdough starter and warm water to the flour mixture. Stir until you have a sticky dough.
  3. Fold in the roasted garlic and parmesan cheese, ensuring even distribution.
  4. Cover the dough with a kitchen towel and let it rest for 4-6 hours at room temperature, or until it has doubled in size.
  5. Once risen, turn the dough onto a floured surface and knead it gently for a few minutes.
  6. Shape the dough into a braid or twist and place it on a baking sheet lined with parchment paper.
  7. Let the dough rise again for about 1-2 hours.
Baking
  1. Preheat your oven to 450°F (230°C).
  2. Brush the top of the dough with olive oil and sprinkle some extra parmesan if desired.
  3. Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  4. Let it cool slightly before slicing.

Notes

Make sure your sourdough starter is active for the best rise and flavor. Feel free to experiment with herbs like rosemary or thyme for added flavor. If short on time, the dough can rise in the refrigerator overnight. Brushing with olive oil is essential for a beautiful crust.
