Preparation
- Gather all your ingredients.
- Preheat your oven to 375°F (190°C) and prepare a baking dish with a light coat of oil.
- In a bowl, mix together the vinegar, sugar, and soy sauce for the sweet and sour sauce.
- Place the chicken in the baking dish and pour the sauce over it.
- Add the vegetables and pineapple on top.
Cooking
- Bake the dish until the chicken is cooked through and flavors meld, about 45 minutes.
Notes
For richer flavor, marinate the chicken in the sauce for at least 30 minutes before baking. Do not overcrowd the baking dish for even cooking. Serve with steamed rice or quinoa.
