  • 3 items ripe bananas, mashed well Use very ripe bananas for the best flavor.
  • 1 cup sugar
  • 1 item egg, beaten
  • 1/3 cup butter, melted Can substitute with vegetable oil.
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch salt
  • 1 1/2 cups all purpose flour Do not over mix the batter.
  • 1/2 cup chopped walnuts or pecans Chop nuts small for even bites.

Method
 

Preparation
  1. Preheat the oven to 350°F, grease a 9x5 inch loaf pan.
  2. In a bowl, mash bananas until smooth.
  3. Stir in sugar, beaten egg, melted butter, and vanilla.
  4. Sprinkle baking soda and salt over the mix, stir in.
  5. Add flour, fold in until the batter is just mixed, do not over mix.
  6. Fold in the chopped nuts.
Baking
  1. Pour batter into the pan, smooth the top.
  2. Bake for 55 to 65 minutes, or until a toothpick in the center comes out clean.
Cooling
  1. Let the bread cool in the pan for 10 minutes, then turn out on a wire rack to cool more.
Serving
  1. Slice and serve warm or at room temperature.

Notes

Tips for success: Use very ripe bananas, do not over mix the batter, check the bread at 50 minutes, cover with foil if the top browns too fast, and let the bread cool a bit before slicing.
