Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cake mix, eggs, oil, and water as directed on the package.
  3. Chop fresh rhubarb into small pieces and fold it into the batter.
  4. Pour the mixture into a greased baking dish.
  5. Bake for about 30-35 minutes or until a toothpick comes out clean.
  6. Let it cool, then dust with powdered sugar before serving.

Notes

Fresh rhubarb is best for flavor. Mix batter well but avoid over-mixing to keep cake light. Cool completely before dusting with sugar.
