  • 2 pieces boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium onion, sliced
  • 1 piece bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil, divided
  • 2 tablespoons green onions, chopped for garnish
Sauce Ingredients
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon honey
  • 1/2 teaspoon rice vinegar
  • 1 teaspoon freshly ground black pepper

Method
 

Preparation
  1. Mix sliced chicken with cornstarch, salt, and 1/2 teaspoon black pepper until evenly coated.
Cooking Chicken
  1. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  2. Stir-fry chicken until browned for 4-5 minutes. Remove and set aside.
Cooking Vegetables
  1. In the same skillet with the remaining oil, stir-fry onion and bell pepper for 2-3 minutes.
  2. Add mushrooms and garlic; cook another 2-3 minutes.
Making Sauce
  1. Whisk together soy sauce, oyster sauce, honey, rice vinegar, and 1 teaspoon black pepper.
Combining Ingredients
  1. Add sauce to vegetables, then return chicken to the skillet.
  2. Toss until well-coated and heated through for 1-2 minutes.
Finishing Touch
  1. Garnish with green onions and serve hot over rice or noodles.

Notes

For added texture and flavor, consider sprinkling some toasted sesame seeds or a squeeze of lime juice on top just before serving.
