  • 1 tsp vanilla extract For added flavor.
  • 1 tbsp honey or maple syrup Adjust sweetness to taste.
  • 1/2 tsp salt Enhances flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cottage cheese, eggs, vanilla, and honey or maple syrup. Mix well until smooth.
  3. Stir in rolled oats, blueberries, and salt until fully combined.
Baking
  1. Pour the mixture into a greased baking dish and spread evenly.
  2. Bake for 30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

Notes

Add nuts for extra crunch or serve with Greek yogurt. Can be made in advance and stored in the fridge.
