Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mash the ripe bananas with a fork.
- In a separate bowl, mix the browned butter and sugar until well combined.
- Add the eggs and vanilla extract to the butter mixture, and mix until combined.
- Stir in the mashed bananas.
- In another bowl, mix the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Baking
- Fill each muffin cup with the batter and bake for 18-22 minutes.
- Check for doneness by inserting a toothpick into the center of a muffin. It should come out clean or with a few moist crumbs.
Notes
For serving, try spreading butter or cream cheese on top, or add chocolate chips, nuts, or a drizzle of honey for a special touch. Store leftovers in an airtight container.
