Brown Butter Banana Muffins

Ingredients
  

Main ingredients
  • 3 each ripe bananas The riper the bananas, the sweeter and more flavorful the muffins will be.
  • 1/2 cup brown butter Be careful not to burn the butter while browning.
  • 1 cup sugar
  • 2 each large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the ripe bananas with a fork.
  3. In a separate bowl, mix the browned butter and sugar until well combined.
  4. Add the eggs and vanilla extract to the butter mixture, and mix until combined.
  5. Stir in the mashed bananas.
  6. In another bowl, mix the flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Baking
  1. Fill each muffin cup with the batter and bake for 18-22 minutes.
  2. Check for doneness by inserting a toothpick into the center of a muffin. It should come out clean or with a few moist crumbs.

Notes

For serving, try spreading butter or cream cheese on top, or add chocolate chips, nuts, or a drizzle of honey for a special touch. Store leftovers in an airtight container.
