Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 2 sticks butter, melted Make sure the butter is melted but not too hot.
  • 1 cup chopped pecans Consider toasting for enhanced flavor.
For the filling
  • 8 oz package of cream cheese
  • 1 cup powdered sugar
  • 1 cup Cool Whip For blending into the cream cheese mixture.
  • 2 large boxes butter pecan instant pudding mix Ensure to mix well.
  • 3 cups milk
For topping
  • 1.5 cups Cool Whip Used as a topping.
  • Chopped nuts for garnish Use additional toasted nuts for extra crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the melted butter into the flour until it forms a coarse meal. Now, add the chopped pecans.
  3. Press the dough evenly into your baking dish.
  4. Bake for 15 minutes until golden and then cool completely.
Cream Layer
  1. In another bowl, blend cream cheese, powdered sugar, and 1 cup of Cool Whip until creamy.
  2. Spread this mixture over the cooled crust.
Pudding Layer
  1. In a large bowl, whisk the butter pecan pudding mixes with milk until thick.
  2. Layer this pudding over the cream layer, then top with the remaining Cool Whip and some toasted pecans.
Chill and Serve
  1. Chill in the refrigerator before serving.
  2. When ready to serve, slice the Butter Pecan Delight into squares and add a sprinkle of chopped nuts.

Notes

Store any leftovers tightly covered with plastic wrap or in an airtight container in the fridge for about 3-4 days. Keep it chilled until serving again.
