Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Make sure butter is softened but not melted.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup toffee bits (or chopped toffee candy) Can substitute with chocolate chips or nuts for variation.

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the toffee bits gently.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

To keep cookies chewy, do not overbake them. They might seem soft when you take them out, but they will firm up as they cool. Consider adding a pinch of cinnamon or nutmeg for extra flavor.
