  • 1 pound asparagus, trimmed Look for bright green stalks that are firm but not woody.
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved or torn Regular mozzarella can be used, cut into small cubes.
Seasoning and dressing
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • to taste Salt and pepper
  • for garnish leaves Fresh basil

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, lay out the asparagus. Add the cherry tomatoes and mozzarella.
  3. Drizzle olive oil and balsamic vinegar over the vegetables. Season with salt and pepper, then toss everything together to ensure all ingredients are well-coated.
Cooking
  1. Roast in the oven for 15 to 20 minutes, or until the asparagus is tender and slightly crispy.
  2. Remove from the oven, and top with fresh basil leaves before serving.

Notes

This dish is best served fresh. You can roast the asparagus and tomatoes ahead of time and warm briefly before serving. Add fresh basil afterward for vibrant flavor.
