Preparation
- Preheat the oven to 375°F (190°C).
- Cook the tortellini in salted water just until al dente, then drain well.
- In a large pan, brown the ground beef or Italian sausage and drain the fat.
- Add the chopped onion and minced garlic to the pan and cook until soft.
- Stir in the marinara sauce, pinches of salt, pepper, and Italian seasoning. Let the sauce simmer for 5 to 10 minutes.
- In a large bowl, mix the cooked tortellini with the meat sauce and add ricotta or cottage cheese if desired.
Assembly and Baking
- Pour half of the tortellini mixture into a 9x13 inch baking dish.
- Sprinkle with 1 cup shredded mozzarella and 1/2 cup grated Parmesan.
- Add the rest of the pasta mixture and top with 1 to 1.5 cups of mozzarella.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let sit for 5 minutes before serving.
Notes
Do not overcook the tortellini for a better texture. Adjust salt and seasoning to taste before mixing with pasta. Use a mix of cheeses for enhanced flavor.
