  • 1 teaspoon baking powder
  • 2 large eggs Whisk before adding to the mixture.
  • 1/4 cup finely chopped green onions Adds flavor and freshness.

Preparation
  1. Gather all ingredients and cut fresh corn from the cob if needed.
  2. In a large bowl, mix flour and baking powder until well combined.
  3. In another bowl, whisk eggs, then stir in corn, cheese, and green onions.
  4. Pour the egg mixture into the dry ingredients and gently combine without overmixing.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Drop spoonfuls of batter into the oil.
  3. Fry until golden brown on both sides, approximately three minutes each side.
  4. Drain on paper towels.

Notes

Serve warm with sour cream or a tangy dipping sauce. Store any leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
