Ingredients

Dough and Filling
  • 1 package store-bought pizza or dinner roll dough Alternatively, make your own dough.
  • 1/4 cup garlic butter For spreading over the dough.
  • 1 cup shredded mozzarella cheese Use good quality for best results.
  • 1/2 cup grated pecorino or parmesan cheese For a sharper flavor.
  • 1/4 cup chopped fresh parsley or oregano Optional herbs for added flavor.
  • 1 tbsp olive oil For brushing on top before baking.

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lightly flour a work surface and roll the dough into a rectangle about 1/4 inch thick.
  3. Spread a thin layer of garlic butter over the dough.
  4. Sprinkle shredded mozzarella and pecorino or parmesan cheese evenly over the dough.
  5. Add chopped parsley or oregano if desired.
  6. Roll the dough tightly from one long side to the other, making a log.
  7. Cut the log into even pieces and place them cut-side up on the baking sheet, leaving space to expand.
  8. Brush the tops with more garlic butter and a little olive oil.
Baking
  1. Bake for 18 to 22 minutes, until golden and cheese is melted.
  2. Let the rolls cool for a few minutes before serving so the cheese sets slightly.

Notes

Use good quality mozzarella and sharper cheese for more flavor. Don't overfill the dough to prevent leaks during baking. Brush the tops with garlic butter for a golden crust, and adjust baking time if using store-bought dough.
