Preparation
- Preheat the oven to 350 F.
- Brown the ground beef in a skillet, drain the fat, and season with salt and pepper.
- In a large bowl, mix the thawed hashbrowns, cooked beef, cream of mushroom or chicken soup, sour cream, cheddar cheese, and chopped onion if using. Stir well.
- Pour the mix into a greased 9x13 inch baking dish and spread it evenly.
- Top with extra cheese if desired.
Baking
- Bake for 40 to 50 minutes, until the top is golden and the casserole is hot in the center.
- Let it sit for 5 minutes before serving.
Notes
For a less soggy bake, thaw hashbrowns and squeeze out extra water. Use sharp cheddar for a stronger taste. Cover with foil if the top browns too fast. Let it rest after baking for better slicing.
