Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
- If using, add chopped onions and bell peppers to the skillet and cook until soft.
- In a mixing bowl, combine the cooked beef mixture with rice, cream of mushroom soup, and 1 cup of cheese. Mix well.
- Pour the mixture into a greased baking dish and sprinkle the remaining cheese on top.
Baking
- Cover the baking dish with aluminum foil and bake for about 30 minutes.
- Remove the foil and bake for another 10 to 15 minutes until the cheese on top is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
You can customize the casserole with your favorite vegetables or spices. Leftovers can be refrigerated or frozen for later use.
