  • 2 pounds potatoes, diced Cut into even sizes for even cooking.
  • 1 pound smoked sausage, sliced Can be substituted with grilled chicken or turkey sausage.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or Pepper Jack cheese can be used.
  • 1 packet ranch seasoning
  • 2 tablespoons oil For cooking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and dice the potatoes into small pieces.
  3. In a large bowl, combine the diced potatoes with a drizzle of oil and the ranch seasoning.
  4. Mix everything well so that all the potatoes are coated in the seasoning.
  5. Slice the smoked sausage into rounds and add it to the bowl with the potatoes.
  6. Stir well to combine and pour the mixture into a greased baking dish.
  7. Spread it out evenly and top with the shredded cheese.
Cooking
  1. Bake in the preheated oven for about 30-35 minutes until the potatoes are tender.
  2. For an extra cheesy finish, broil for a few minutes to bubble the cheese on top.
Serving
  1. Allow to cool for a few minutes before serving.
  2. Serve directly from the baking dish or pair with a fresh green salad.
  3. Optional: Add a dollop of sour cream or a sprinkle of fresh herbs on top.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat using an oven to retain crispiness.
