Preparation
- Preheat your oven to 400°F (200°C).
- Chop the potatoes into bite-sized pieces. Optionally, soak them in water for a few minutes to promote faster cooking.
- Slice the smoked sausage into rounds.
- In a large bowl, mix the diced potatoes and sausage with olive oil and ranch seasoning until well coated.
Cooking
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the sausage is browned, stirring halfway through.
- Sprinkle shredded cheese on top and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, allow to cool slightly, and serve.
