  • 4 medium potatoes, peeled and diced
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese divided
  • 1 cup sour cream
  • 1 cup diced tomatoes (optional) for garnish
  • to taste chopped green onions for garnish
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.
  3. In a skillet, brown the ground beef or turkey over medium heat. Drain any excess fat.
  4. Stir in the taco seasoning and a little water according to package instructions. Mix well.
  5. In a large bowl, combine the cooked potatoes and the meat mixture. Add the sour cream and half of the cheese, mixing until everything is well combined.
  6. Transfer the mixture to a baking dish. Top with the remaining cheese.
Cooking
  1. Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
  2. Garnish with diced tomatoes and chopped green onions before serving.

Notes

For a twist, try using sweet potatoes or different types of cheese like pepper jack. You can also use leftover cooked meat to save time.
