Preparation
- Preheat your oven to 350°F (175°C) and grab an 8x8-inch square baking pan. Line it with parchment paper.
- In a large saucepan over medium heat, combine the sugar, butter, and evaporated milk. Stir gently but continuously until the mixture comes to a full boil.
- Once boiling, stop stirring and allow it to boil for about 4-5 minutes.
Making the Filling
- Remove the saucepan from the heat and quickly add in the chocolate chips, vanilla extract, and Cherry Coke. Stir until everything melts together.
- Fold in the chopped cherries.
Assembly
- Pour the fudge mixture into the lined baking pan and spread it out smoothly with a spatula.
- Allow it to cool at room temperature for about 2 hours.
- Cut into squares and if possible, refrigerate before serving.
Notes
For best results, use quality ingredients and do not rush the cooling process. You can add nuts or even a splash of mint extract for a twist.
