  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter Softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • a pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together brown sugar, granulated sugar, and softened butter until light and fluffy.
  3. Add the egg and vanilla extract, mixing well until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
Baking
  1. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a lined baking sheet.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. Store leftovers in an airtight container.
