  • 8 ounces lo mein noodles Cook according to package directions
  • 1 pound boneless chicken Cut into thin strips and seasoned with salt and pepper
  • 2 tablespoons oil For stir-frying
  • 1 cup carrots Sliced
  • 1 cup bell peppers Sliced
  • 1 cup sliced onions
  • 1 cup mushrooms Sliced
  • 1 cup green onions Sliced
Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce or hoisin
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 cloves garlic Minced
  • 1 teaspoon ginger Minced

Method
 

Preparation
  1. Cook lo mein noodles according to package directions, drain, and set aside.
  2. Cut boneless chicken into thin strips and season with salt and pepper.
  3. Mix sauce ingredients in a bowl: soy sauce, oyster sauce or hoisin, sesame oil, sugar, garlic, and ginger.
Cooking
  1. Heat oil in a large pan or wok over medium-high heat. Add chicken and stir-fry until cooked through, then remove from the pan.
  2. In the same pan, add more oil and stir-fry carrots, bell peppers, and sliced onions until crisp-tender.
  3. Add mushrooms and green onions, cooking for one minute.
  4. Return the cooked chicken to the pan.
  5. Add the cooked noodles and pour the sauce over everything. Toss well to coat all noodles and pieces.
  6. Stir for 1 to 2 minutes until everything is hot.
  7. Taste and adjust seasoning with more soy or sugar if needed. Serve immediately for the best texture.

Notes

Tips for success: Use high heat for searing, don't overcook the noodles, slice chicken thin, prepare all ingredients beforehand, and taste the sauce before serving.
