- Place chicken thighs in a large resealable bag or container and pour the chimichurri sauce over them. Seal and marinate for at least 30 minutes, or overnight for best results.
Cooking
- Preheat your grill or skillet to medium-high heat.
- Remove chicken from marinade and place on the grill or skillet.
- Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

- Serve the chimichurri chicken thighs with sides like a fresh garden salad, grilled vegetables, or over rice or quinoa.
