Ingredients
  

For the cookie dough
  • 1 cup unsalted butter Melted
  • 1 cup granulated sugar
  • 1 cup brown sugar Packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon coffee extract Enhances chocolate flavor
  • 1 cup all-purpose flour
  • 1/2 cup Hershey's Special Dark cocoa powder Unsweetened
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Any variety
  • 1/2 cup chopped nuts Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until smooth.
  3. Add in the eggs and vanilla extract, followed by the coffee extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  6. Fold in the chocolate chips and nuts, if using.
  7. Chill the dough in the refrigerator for about 30 minutes if it feels too soft.
Baking
  1. Drop rounded tablespoons of dough onto a lined baking sheet, leaving enough space between each cookie.
  2. Bake in the preheated oven for 10-12 minutes, checking for doneness.
  3. Allow cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for 3-5 days. For longer storage, refrigerate for up to a week or freeze for later.
