Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until smooth.
- Add in the eggs and vanilla extract, followed by the coffee extract. Mix until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
- Fold in the chocolate chips and nuts, if using.
- Chill the dough in the refrigerator for about 30 minutes if it feels too soft.
Baking
- Drop rounded tablespoons of dough onto a lined baking sheet, leaving enough space between each cookie.
- Bake in the preheated oven for 10-12 minutes, checking for doneness.
- Allow cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for 3-5 days. For longer storage, refrigerate for up to a week or freeze for later.
