Cinnamon Apple Bread

Ingredients
  

For the bread
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 cup granulated sugar Adjust based on sweetness of apples.
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon Plus more for the glaze.
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted Can substitute with vegetable oil.
  • 2 large eggs
  • 1/2 cup sour cream Can substitute with yogurt.
  • 2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp) Toss in flour before adding to batter.
For the glaze
  • 1 cup confectioners' sugar Add more or less for desired consistency.
  • 1 tsp ground cinnamon
  • 2 tbsp water Adjust for sauce thickness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix melted butter, eggs, and sour cream until combined.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in the diced apples.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. Let the bread cool for a few minutes, then make the glaze by whisking together the confectioners' sugar, cinnamon, and water.
  2. Drizzle the glaze over the warm bread before serving.

Notes

Store in an airtight container at room temperature for up to 3 days. To prolong freshness, refrigerate wrapped tightly for up to a week or freeze individual slices for up to 3 months.
