Preparation
- Preheat oven to 350°F and grease a 9x5 inch loaf pan or line it with parchment.
- In a bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, sugar, and beaten eggs until well mixed.
- Add the vanilla extract.
- In another bowl, mix the all-purpose flour, baking soda, salt, and ground cinnamon.
- Fold the dry mix into the banana mix and stir until just combined; do not over mix.
Crumb Topping Preparation
- To make the crumb topping, mix the brown sugar, flour, cinnamon, and cold butter in a bowl.
- Use a fork to mix until crumbly.
Baking
- Pour the batter into the prepared pan and sprinkle the crumb topping evenly over the batter.
- Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out to finish cooling on a rack.
Notes
Serve warm with butter or cream cheese. For a heartier snack, toast slices and spread with nut butter.
