Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Mix in the baking soda and salt.
- Add the sugar, egg, and vanilla, then mix until everything is blended.
- Gradually stir in the flour until just combined.
Assembly
- In a small bowl, mix the cinnamon and brown sugar together.
- Pour half of the batter into the prepared loaf pan.
- Sprinkle half of the cinnamon-sugar mixture over the batter.
- Add the remaining batter, followed by the rest of the cinnamon-sugar mixture on top.
- Use a knife to swirl the cinnamon mixture into the batter by gently running it through the loaf.
Baking
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Don't overmix the batter; mixing just until combined will keep your bread tender. For an extra boost of flavor, consider adding nuts or chocolate chips into the batter.
