Preparation
- In a large bowl, combine the active sourdough starter and warm water. Mix until well blended.
- Add bread flour, sugar, salt, and ground cinnamon to the mixture. Stir until the dough starts to come together.
- Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 4 hours or until doubled in size.
Shaping
- Once the dough has risen, punch it down and roll it out into a rectangle.
- Brush the rolled dough with melted butter and sprinkle with cinnamon and sugar mixture.
- Roll the dough tightly to form a loaf and tuck the ends under. Place it in a greased loaf pan.
- Cover the loaf with a cloth and let it rise again for about 2 hours, or until it doubles in size.
Baking
- Preheat your oven to 375°F (190°C).
- Bake the loaf for 30-35 minutes, or until it is golden brown and sounds hollow when tapped.
- Let the bread cool on a wire rack before slicing.
Notes
Serve warm with butter, or toast for breakfast. Can also be used for French toast. Store in an airtight bag at room temperature for up to 3 days.
