Method
Preheat & Prepare the Base
- If you prefer a toasted base, preheat your oven to 350°F (175°C) and toast the crumb layer for 8–10 minutes. Keep an eye on it to avoid burning.
- Place Circus Animal Cookies in a zip-top bag and bash with a rolling pin until you have mostly fine crumbs with a few chunky bits for texture.
- In a medium bowl, mix the crushed cookies with the melted butter and a pinch of salt until the crumbs hold together when pressed.
- Press the mixture into the bottom of a 9x13-inch baking dish or a trifle bowl for presentation.
Make the Main Filling
- In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Whisk the instant vanilla pudding with cold milk for about 2 minutes until thickened. Let it sit for a minute.
- Gently fold the whipped topping into the cream cheese mixture until combined. Fold in the prepared pudding and sour cream, aiming for a light, mousse-like texture.
- Fold in 1/2 cup of sprinkles and 3/4 cup of crushed Circus Animal Cookies.
Assemble and Chill
- Spoon half of the cream cheese-pudding mixture over the cookie base, smoothing with a spatula and adding a layer of crushed cookies and sprinkles.
- Add the remaining filling and top with crushed cookies, sprinkles, and reserved Circus Animal Cookies.
- Cover and chill for at least 4 hours, ideally overnight.
Notes
For a firmer set, use less whipped topping and add extra pudding powder. Adding a tablespoon of lemon juice can enhance the tangy flavor.
