Ingredients
  

For the Crust
  • 3 cups Circus Animal Cookies, crushed (about 10–12 oz; some larger chunks for crunch)
  • 6 tablespoons unsalted butter, melted (adds a rich, buttery base)
  • Pinch of salt (to balance the sweetness)
For the Filling
  • 8 oz cream cheese, softened to room temperature (for a tangy, luxurious layer)
  • 1 cup powdered sugar (sifted if lumpy)
  • 1 teaspoon pure vanilla extract (tiny luxury!)
  • 1 package instant vanilla pudding mix (3.4 oz)
  • 2 cups cold milk (for the pudding; use whole milk for creamier texture)
  • 1 container frozen whipped topping, thawed (8 oz) (or 2 cups heavy cream whipped to soft peaks)
  • 1/2 cup sour cream (optional — gives a silky tang)
  • 1/2 cup rainbow sprinkles (plus more for garnish)
  • 8–10 pieces Circus Animal Cookies, coarsely crushed (for garnishing, optional)

Method
 

Preheat & Prepare the Base
  1. If you prefer a toasted base, preheat your oven to 350°F (175°C) and toast the crumb layer for 8–10 minutes. Keep an eye on it to avoid burning.
  2. Place Circus Animal Cookies in a zip-top bag and bash with a rolling pin until you have mostly fine crumbs with a few chunky bits for texture.
  3. In a medium bowl, mix the crushed cookies with the melted butter and a pinch of salt until the crumbs hold together when pressed.
  4. Press the mixture into the bottom of a 9x13-inch baking dish or a trifle bowl for presentation.
Make the Main Filling
  1. In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. Whisk the instant vanilla pudding with cold milk for about 2 minutes until thickened. Let it sit for a minute.
  3. Gently fold the whipped topping into the cream cheese mixture until combined. Fold in the prepared pudding and sour cream, aiming for a light, mousse-like texture.
  4. Fold in 1/2 cup of sprinkles and 3/4 cup of crushed Circus Animal Cookies.
Assemble and Chill
  1. Spoon half of the cream cheese-pudding mixture over the cookie base, smoothing with a spatula and adding a layer of crushed cookies and sprinkles.
  2. Add the remaining filling and top with crushed cookies, sprinkles, and reserved Circus Animal Cookies.
  3. Cover and chill for at least 4 hours, ideally overnight.

Notes

For a firmer set, use less whipped topping and add extra pudding powder. Adding a tablespoon of lemon juice can enhance the tangy flavor.
