Preparation
- Soak or soften the thin noodles in warm water for a few minutes until they bend, then drain.
- Prep all ingredients before cooking to keep the pan hot.
Cooking
- Heat a large pan or wok over medium high heat, add a little oil.
- Cook the sliced meat (chicken, pork, or shrimp) until light brown, remove, and set aside.
- In the same pan, add a bit more oil and stir fry garlic and onion until fragrant.
- Add the hard vegetables (carrots and cabbage) and stir fry for two minutes.
- Add the softer vegetables (bean sprouts and green beans) and stir fry briefly.
- Push the vegetables to the side, add the drained noodles, and pour the chicken broth, soy sauce, and fish/oyster sauce over them.
- Toss gently so the noodles soak up the sauce and heat through.
- Return the cooked meat to the pan and toss everything together for a minute or two.
- Taste and adjust with salt or pepper if needed.
- Finish with a squeeze of fresh lemon or calamansi juice and garnish with chopped scallions.
- Serve hot on a large platter.
Notes
Keep the pan hot for a quick stir fry; prep all ingredients beforehand to ensure a seamless cooking experience. Leftovers can be reheated with a splash of broth to restore moisture.
