Ingredients
  

For the Noodles and Sauce
  • 8 ounces thin noodles Soaked in warm water until flexible
  • 2 cups chicken broth
  • 4 tablespoons soy sauce Adjust to taste
  • 1 tablespoon fish sauce or oyster sauce Optional, for extra flavor
For the Proteins
  • 1 cup sliced chicken, pork, or shrimp Cooked until light brown
For the Vegetables
  • 1 cup sliced carrots Hard vegetable
  • 2 cups cabbage, chopped Hard vegetable
  • 1 cup bean sprouts Soft vegetable
  • 1 cup green beans, cut Soft vegetable
  • 2 cloves garlic, minced Fresh garlic is best
  • 1 medium onion, sliced
  • 2 tablespoons oil For cooking
  • 1 tablespoon fresh lemon or calamansi juice For brightness
  • 2 tablespoons chopped scallions For garnish

Method
 

Preparation
  1. Soak or soften the thin noodles in warm water for a few minutes until they bend, then drain.
  2. Prep all ingredients before cooking to keep the pan hot.
Cooking
  1. Heat a large pan or wok over medium high heat, add a little oil.
  2. Cook the sliced meat (chicken, pork, or shrimp) until light brown, remove, and set aside.
  3. In the same pan, add a bit more oil and stir fry garlic and onion until fragrant.
  4. Add the hard vegetables (carrots and cabbage) and stir fry for two minutes.
  5. Add the softer vegetables (bean sprouts and green beans) and stir fry briefly.
  6. Push the vegetables to the side, add the drained noodles, and pour the chicken broth, soy sauce, and fish/oyster sauce over them.
  7. Toss gently so the noodles soak up the sauce and heat through.
  8. Return the cooked meat to the pan and toss everything together for a minute or two.
  9. Taste and adjust with salt or pepper if needed.
  10. Finish with a squeeze of fresh lemon or calamansi juice and garnish with chopped scallions.
  11. Serve hot on a large platter.

Notes

Keep the pan hot for a quick stir fry; prep all ingredients beforehand to ensure a seamless cooking experience. Leftovers can be reheated with a splash of broth to restore moisture.
