  • 1 cup quinoa, rinsed and cooked You can use leftover quinoa to speed up the preparation.
  • 1 cup oats, ground into flour Make sure to use gluten-free oats if necessary.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup cottage cheese Can substitute with ricotta or cream cheese.
  • 2 large eggs
  • 1/4 cup honey or maple syrup For sweetness.
  • 1/4 cup olive oil

Method
 

Preparing the Batter
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the cooked quinoa, oat flour, baking powder, and salt.
  3. In another bowl, whisk together the cottage cheese, eggs, honey, and olive oil until smooth.
  4. Mix the wet ingredients into the dry ingredients until fully combined.
Baking the Bread
  1. Pour the batter into the greased loaf pan and smooth the top.
  2. Bake in the preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
