Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs Beat in one at a time.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (walnuts or pecans work well) You can substitute with seeds or dried fruit.
  • 1/2 cup shredded coconut (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the creamed mixture.
  5. Stir in the rolled oats, chocolate chips, chopped nuts, and coconut (if using).
  6. Drop large spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for about 10 to 12 minutes, or until the edges are golden brown.
  8. Let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Make sure not to overbake the cookies; they should be golden around the edges but slightly soft in the center. Enjoy with milk, coffee, or ice cream.
