Ingredients
  

Turkey and Seasoning
  • 1 large bone-in turkey breast Bone-in for more flavor; adjust cooking time if boneless.
  • to taste salt For seasoning turkey.
  • to taste pepper For seasoning turkey.
Cranberry Orange Glaze
  • 2 cups fresh or frozen cranberries
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine cranberries, orange juice, orange zest, brown sugar, honey, and a pinch of salt. Cook on medium heat until the cranberries burst and the mixture thickens, about 10-15 minutes.
  3. Season the turkey breast with salt and pepper and place it in a roasting pan.
  4. Brush a generous amount of the cranberry-orange mixture over the turkey, reserving some glaze for later.
Cooking
  1. Roast the turkey in the oven for 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  2. Baste the turkey with the reserved glaze every 30 minutes for added flavor and moisture.
  3. Once done, let the turkey rest for about 20 minutes before slicing.

Notes

Ensure the turkey is not overcooked by using a meat thermometer. For extra flavor, consider marinating the turkey overnight with some of the glaze. Simmer the glaze longer if you desire a thicker consistency.
