Ingredients
  

Pasta Ingredients
  • 12 oz 12 oz (340 g) pasta, any shape you like
  • 2 2 ripe avocados Use ripe avocados for creaminess.
  • 1 small clove 1 small garlic clove
  • 2 tablespoons 2 tablespoons lemon juice
  • 1/4 cup 1/4 cup olive oil
  • 1/4 cup 1/4 cup grated Parmesan or nutritional yeast for vegan option Use nutritional yeast for a vegan option.
  • Salt and black pepper, to taste Season well for flavor.
  • 1/4 cup 1/4 cup hot pasta water Reserve more if needed for sauce consistency.
  • A few fresh basil leaves, optional Chop to stir in for flavor.
  • Cherry tomatoes or red pepper flakes, optional topping Optional for serving.

Method
 

Cooking Pasta
  1. Cook the pasta in salted boiling water until al dente, following package time.
  2. Reserve 1/2 cup hot pasta water, then drain the pasta.
Making Avocado Sauce
  1. While pasta cooks, scoop avocados into a blender or bowl.
  2. Add garlic, lemon juice, olive oil, Parmesan or nutritional yeast, salt, and pepper.
  3. Blend or mash until smooth, adding a little pasta water to reach a creamy sauce.
Combining
  1. Toss the hot pasta with the avocado sauce, adding more pasta water if needed to coat well.
  2. Stir in chopped basil if you like, and taste to adjust salt and pepper.
Serving
  1. Serve right away, topped with cherry tomatoes, extra cheese, or red pepper flakes.

Notes

Best served right away. The avocado sauce can darken if it sits too long. Consider serving with lemon wedges and a green salad.
