Method
Cooking Pasta
- Cook the pasta in salted boiling water until al dente, following package time.
- Reserve 1/2 cup hot pasta water, then drain the pasta.
Making Avocado Sauce
- While pasta cooks, scoop avocados into a blender or bowl.
- Add garlic, lemon juice, olive oil, Parmesan or nutritional yeast, salt, and pepper.
- Blend or mash until smooth, adding a little pasta water to reach a creamy sauce.
Combining
- Toss the hot pasta with the avocado sauce, adding more pasta water if needed to coat well.
- Stir in chopped basil if you like, and taste to adjust salt and pepper.
Serving
- Serve right away, topped with cherry tomatoes, extra cheese, or red pepper flakes.
Notes
Best served right away. The avocado sauce can darken if it sits too long. Consider serving with lemon wedges and a green salad.
