Preparation
- Preheat the oven to 350°F and grease a 9×13 inch baking dish with melted butter.
- If using bread, spread the bread cubes in the dish; if using hash browns, spread them evenly.
- Scatter the chopped onion and cooked bacon or sausage over the bread or potatoes.
- In a bowl, beat the eggs, then add milk, salt, pepper, and half the cheese. Stir until smooth.
- Pour the egg mixture over the dish and press down the bread slightly to soak up the eggs.
- Sprinkle the rest of the cheese on top and drizzle melted butter over the casserole.
- Let it sit for 10 minutes so the bread can soak up the egg mixture.
Baking
- Bake for 35 to 45 minutes, until the center is set and the top is lightly browned.
- Let the casserole cool for 5 to 10 minutes before slicing and serving.
Notes
For extra success, use day old bread or well-drained hash browns, let the egg mixture soak at least 10 minutes, and avoid overbeating the eggs.
