  • 2 cloves garlic, minced

  • 2 tablespoons flour
  • 4 cups vegetable broth
  • 1 cup sour cream Can be added after freezing to retain texture.
  • to taste Salt and pepper
  • Fresh parsley for garnish Adds color and flavor.

Preparation
  1. In a large pot, heat a bit of oil over medium heat and sauté the onions until they're translucent.
  2. Add the garlic and mushrooms, cooking until the mushrooms release their moisture and begin to brown.
  3. Stir in the paprika, then sprinkle the flour over the mixture and stir to coat evenly.
  4. Gradually add the vegetable broth, stirring until it thickens slightly.
  5. Lower the heat and stir in the sour cream until it’s well combined.
  6. Season with salt and pepper to taste.
  7. Simmer on low for about 15 minutes, allowing the flavors to meld.
  8. Serve hot, garnished with fresh parsley.

Notes

Use fresh ingredients for best flavor. Adjust thickness by adding more flour for a thicker soup or more broth for a thinner consistency. Experiment with spices to customize the flavor.
