  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream Add before serving to maintain texture if freezing.
  • 2 cups kale, chopped
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Grated Parmesan cheese, for serving

Cooking
  1. In a large pot, brown the Italian sausage over medium heat until fully cooked. Break it into small pieces as it cooks.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion becomes translucent.
  3. Pour in the chicken broth and diced tomatoes, stirring to combine.
  4. Bring the mixture to a simmer, then stir in the heavy cream and chopped kale.
  5. Add the Italian seasoning and salt and pepper to taste. Continue to simmer for about 5-10 minutes until the kale is tender.
  6. Serve hot, topped with grated Parmesan cheese.
