  • 4 pieces chicken breasts Boneless, skinless
  • 2 tablespoons olive oil For cooking chicken
  • 3 cloves garlic Minced
  • 1 cup sun-dried tomatoes Chopped
  • 2 cups fresh spinach Or frozen if needed
  • 1 cup heavy cream
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown on both sides.
  3. Remove the chicken from the skillet and set it aside.
Cooking
  1. In the same skillet, add minced garlic and cook until fragrant.
  2. Stir in the sun-dried tomatoes and spinach.
  3. Gradually add heavy cream and let it simmer.
  4. Finally, return the chicken to the skillet, allowing it to soak in all those delicious flavors.

Notes

Don’t rush the browning of the chicken for added flavor. Serve with garlic bread, rice, or a light salad. For variations, add white wine before adding the cream.
