  • 1 lb Italian sausage You can use either mild or spicy sausage according to your preference.
  • 1 package fresh or frozen tortellini For a softer texture, use fresh tortellini. If using frozen, add during the last 15 minutes.
  • 4 cups chicken broth
  • 1 cup heavy cream This adds the creamy consistency.
  • 2 cups fresh spinach or kale Add in the last 30 minutes for vibrant greens.

Preparation and Cooking
  1. In a large skillet, brown the Italian sausage over medium heat until fully cooked, then drain any excess fat.
  2. Transfer the cooked sausage to the crockpot and add the chicken broth.
  3. Cover and cook on low for 4 hours.
  4. Add the tortellini and heavy cream to the crockpot and stir gently.
  5. Cook on low for an additional 30 minutes until the tortellini is tender.
  6. Stir in the spinach or kale and cook for another 30 minutes.

Notes

Serve with crusty bread, a fresh green salad, or a sprinkle of Parmesan cheese for added flavor. Preferably enjoyed during colder months for maximum comfort.
