Method
 

Preparation
  1. Wash the cucumbers and carrots thoroughly.
  2. Peel the carrots if you prefer, but the skin can add a nice texture.
  3. Slice the cucumbers and julienne the carrots into thin strips.
Mixing
  1. In a large bowl, combine the sliced cucumbers and julienned carrots.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the cucumber and carrot mixture, tossing gently to coat.
