Ingredients
  

For the pasta salad
  • 8 oz Pasta (your favorite type) Short pasta shapes like shells or bow ties work best.
  • 1 cup Chopped dill pickles Adjust for stronger pickle flavor if desired.
  • 1/2 cup Pickle juice From the jar of dill pickles.
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt or vegan mayo.
  • 1 cup Chopped veggies (bell peppers and onions) Feel free to add other vegetables as desired.

Preparation
  1. Boil a pot of water, add your favorite pasta, and cook according to package directions until al dente. Drain and let cool.
  2. In a bowl, combine mayonnaise, chopped dill pickles, pickle juice, and spices to make the dressing.
  3. In a large bowl, add the cooled pasta, chopped veggies, and the dressing. Stir well until everything is coated.
  4. Cover your bowl and place it in the fridge for at least 30 minutes to blend the flavors.
  5. Give it a good stir before serving, and enjoy!

Notes

Chilling the salad allows the flavors to meld. This dish pairs wonderfully with grilled meats, sandwiches, or can be enjoyed on its own.
