Ingredients
  

Salad Base
  • 4 cups fresh mixed greens or lettuce Use crisp greens for best texture.
  • 1 cup sliced cucumbers
  • 1 cup sliced bell peppers Any color bell pepper works.
  • 1 cup sliced radishes
  • 1 cup halved cherry tomatoes For a pop of color.
  • 1 small diced apple or pear For sweetness.
  • 1 handful toasted almonds or walnuts For crunch.
Dressing
  • 1/4 cup olive oil Use good quality for best flavor.
  • 2 tablespoons lemon juice or vinegar Adjust to taste.
  • 1 teaspoon honey or maple syrup To add sweetness.
  • 1 teaspoon mustard
Optional Toppings
  • 1/2 cup crumbled feta or goat cheese For a creamy contrast.
  • 1 handful chopped fresh herbs (parsley or basil) For garnish.

Method
 

Preparation
  1. Wash and dry all produce to avoid sogginess.
  2. Chop the mixed greens into bite-sized pieces and place in a large bowl.
  3. Slice cucumbers, bell peppers, and radishes thin.
  4. Add halved cherry tomatoes and diced apple or pear to the bowl.
  5. Scatter toasted nuts over the top.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice or vinegar, honey or maple syrup, mustard, salt, and pepper until well combined.
  2. Taste and adjust seasoning or sweetness as needed.
Assembly
  1. Toss the greens with enough dressing to coat, but do not soak them.
  2. Add cheese if desired and toss gently.
  3. Sprinkle chopped herbs on top for extra flavor.
  4. Serve immediately to keep the salad crisp.

Notes

Toast nuts in a dry pan for 2 to 3 minutes to enhance flavor. Dress salad just before serving to maintain texture.
