Preparation
- Wash and dry all produce to avoid sogginess.
- Chop the mixed greens into bite-sized pieces and place in a large bowl.
- Slice cucumbers, bell peppers, and radishes thin.
- Add halved cherry tomatoes and diced apple or pear to the bowl.
- Scatter toasted nuts over the top.
Dressing
- In a small bowl, whisk together olive oil, lemon juice or vinegar, honey or maple syrup, mustard, salt, and pepper until well combined.
- Taste and adjust seasoning or sweetness as needed.
Assembly
- Toss the greens with enough dressing to coat, but do not soak them.
- Add cheese if desired and toss gently.
- Sprinkle chopped herbs on top for extra flavor.
- Serve immediately to keep the salad crisp.
Notes
Toast nuts in a dry pan for 2 to 3 minutes to enhance flavor. Dress salad just before serving to maintain texture.
