Preparation
  1. Choose a large flat platter, or use a rimmed baking sheet for space.
  2. Make a bunny body with a large oval of broccoli or a mound of green lettuce.
  3. Form the bunny head above the body with a smaller oval of broccoli or lettuce.
  4. Make two ears with long strips of cucumber or bell pepper placed above the head.
  5. Fill the body and head with mixed vegetables, like carrot sticks, celery, snap peas, and cherry tomatoes, keeping colors even.
  6. Use a small round slice of cucumber or a radish for the nose, and two small olives or blueberries for the eyes.
  7. Add a bowl of ranch or hummus near the bunny for dipping.
  8. Adjust shapes and colors until the bunny looks clear and cheerful.

Notes

Use a mix of colors to make the bunny pop visually, and keep cut veggies in a covered container with a damp paper towel to keep them fresh. Consider adding fruit like grapes for a sweet touch.
